This recipe is a favorite at our house…it sounds almost too simple, the ingredient list too short, and just too…well, too plain, to be very good, but believe me, its always a hit. It’s something about the combination of beef and potatoes that’s just irresistible. Its perfect for busy days when I pull a package of ground beef out of the freezer in the morning to thaw, in hopes that I’ll come up with a plan for what to cook with it before dinner time. Then when dinner time rolls around and I still don’t have a plan, this is one of my go to’s.
So here you go – a one pot meal that comes together quickly and is not only super economical, but super delicious as well.
Ground Beef and Potatoes
- 1 lb Grass-Fed Beef
- 3 cups Potatoes, Diced to about 1/2 in
- 2 Tbsp good oil (Avocado, Duck Fat, Pastured Pork Lard etc.)
- 1 Large Onion, diced
- 2 Cloves Garlic, minced
- 1 Sprig of Fresh Rosemary, leaves chopped (if you don’t care for Rosemary you can use Basil and/or Oregano)
- Salt and Pepper to taste
Heat a large cast iron skillet (12 inch) on medium hot stove top. Add 1 Tbsp of the Oil and brown the ground beef.
Add the Potatoes and Onion and cook and stir until onion is translucent and everything is lightly browned.
Add the Garlic, Rosemary, and Salt and Pepper. Turn heat down to low, cover skillet and let it steam until potatoes are tender, 15 – 20 min, stirring occasionally.
We love this topped with raw, probiotic sauerkraut, but it’s also good with a dollop of sour cream. Serve with a simple salad or steamed veggies.
